From the Author
What are some of your favorite recipes from Bake from Scratch? "I love the Gâteau Basque and the Beaumes-De-Venise Cake with Apricots. But the Gâteau Basque has got to be my all time favorite that I’ve baked at home. It’s the simplicity―simplicity not in technique but in it’s flavor, presentation, and appearance. I love the custardy center and the cakey crust on top and bottom. I love the whole experience of it." -Brian Hart Hoffman

I’m obsessed with this baking book.If you’re a baker I truly recommend this book, there are easy and advance recipes. I have over a hundred baking and cookbooks and even more than that in magazines, I have so many that just as soon as my daughter noticed the new book the first words that came out of her mouth was “Mom, another freaking cookbook?†Yep! Lol.I’ve baked a couple of cakes, several bread recipes including muffins and scones and have been pleased with them all. I especially love the sourdough starter and the cream biscuits are my daughter’s favorite. The only downside is there are not that many cookie or pie recipes. The majority of each recipe in the book gets one full page image so you get a good look at what you are going to bake. Recipes are easy to follow and the book is very large which is great for us that are older and now hard of seeing LOL.
So I recently started a baking blog where I test out new recipes and try to learn new skills. I shopped around the amazon bookstore in our neighborhood for a few weeks looking at baking cookbooks and feel in love with the recipes and beautiful photos in the Bake From Scratch volume 1. I ended up ordering the book online and as soon as it was delivered, I devoured the recipes trying to decide what I would make first. I dipped my toe in the water with the buttermilk drop biscuits. There were simple ingredients and quick steps to follow. I followed them all and my husband described them as "these are like licking a salt lick!" I contacted the publisher to see if they realized their recipe called for a tablespoon of salt - they told me to refer to the corrections page on the website!!! WHAT!!! I NEED TO CHECK THE CORRECTIONS PAGE BEFORE I TRY A RECIPE??? I looked and there are lots of corrections! The correction they sent did not actually address the salt issue and when I e-mailed them back, they never replied. I really really don't want to keep looking for corrections before picking out something to make. I made a few more recipes and looked at the website for corrections before baking and have had issues with almost every one that I have tried. I'm so disappointed. I will be looking for a new cookbook to use and promote on my blog.
The best recipes you will ever find ! I have all the magazines and saw this and my heart took a leap ! I adore all of you amazing chefs!
This is a great baking cookbook, with many of the classics featured (e.g., cheesecake, babka, danish dough) as well as some interesting flavor twists for staples such as muffins and scones. Many of the yeast breads call for active dry yeast and AP flour, so be prepared if you need to convert to instant yeast, or play around with flour ratios to get different textures with incorporation of different flours (I used some bread flour when making the babka). The fact that each recipe shows a picture of the finished product is helpful, even if the food stylist has embellished a bit (e.g., strawberry balsamic muffins).I was drawn to this book after buying a Bake From Scratch magazine and loving the classic simplicity of the recipes. Given that it's volume 1, I'm definitely looking forward to volume 2!
Everything about this book is gorgeous: the images, the layout, and of course the recipes! I had my eye on this for a while and finally decided to buy it, best decision ever! I am a home baker, not a professional by any means but these recipes are so easy to follow and from the ones I've tried so far, a little forgiving when I mess something up. I will definitely buy this as a gift for someone that loves to bake, the recipes are very diverse with cakes, pies, scones, various breads and rolls, and a lot are very quick to make! I can't say enough good things about this book, I am in love!**Added some photos from a brioche recipe I made the other day (from the book). It was my first time making such a bread and it turned out great( best bread recipe I have made yet, my family loved it!
First, let me say that I am addicted to cookbooks. When we recently downsized and relocated across the country, I donated quite a few of my books to our previous community's annual used book sale to benefit the town library. Still, I have dozens and dozens of cookbooks. I have repeatedly told myself that I do not need anymore, but it is hard to resist, especially when a book is as beautiful as this one. I've enjoyed paging through it and admiring the many fine photographs and salivating over the mouth-watering recipes. To date, I have only tried the recipe for Cardamom Dusted Madeleines, but that is the best recipe I've found for Madeleines (and I've tried many). It will now be my one and only for making these yummy treats. I can hardly wait for cooler weather to start baking up a storm!
I bought a nearly new copy of the book, and was really ecstatic about combining all of the recipes from their past issues. So I glanced at the the table of contents and pages of the book, each chapter is divided into different type of pastries, breads. You don't see the independent bakers, flour miller's and bakeries across the country. This is a cookbook making artisan pastries, quick breads and mufgins, etcetera. The photography is amazing.
Being a huge fan of the magazine, I could not pass up the cookbook, which are magazine reprints. However, this will be one of my most favorote baking cookbooks. This cookbook is gift-worthy. Photos are stunning. Recipes are spot-on dependable. Two thumbs up. Attached is a photo of my book with everything I would like to make tagged.
